Serves 10-12
(I usually half this recipe for my family and we still have tons of extras)
12-oz pkg. Jumbo shell pasta, cooked
15-oz can tomato sauce
16-oz pkg. shredded mozz. cheese
2 cups cottage cheese
2 10-oz pkg. Frozen chopped spinach, thawed and drained (or equivalent of cooked fresh spinach)
2 eggs beaten
1/8 t. nutmeg
28-oz. jar spaghetti sauce
*optional: add cooked ground beef or sausage to the stuffing
Garnish: grated Parm. cheese
Rinse pasta with cold water, drain, and put in fridge (this makes it easier to work with when stuffing). Preheat oven to 350 degrees. Combine the next 6 ingredients together; mix well and set aside. Spread 1/4 cup spaghetti sauce evenly over the bottom of 9x13" baking pan. Spoon cheese mixture into shells; place stuffed-side up on top of spaghetti sauce. Pour remaining sauce over the shells; sprinkle with parm. cheese. Cover and bake in oven for 30 minutes.
