I shared this recipe with Aubrey a while back and she uses it all the time as well. It is a super fast roll recipe, great for when you don't have a lot of time or when you forget to pull out the frozen rolls :)
*Makes 2 dozen rolls
3 cups warm water
1/4 cup butter, softened
2 T. yeast
1 Tb. salt
1/2 cup sugar
7 cups flour (half wheat/half white)
Add a Tb. of the sugar into a bowl of the warm water, dissolve and then add yeast. Let sit for 10 minutes. In a mixing bowl combine the remaining sugar, butter, salt, and half of the flour. Keep adding flour until a workable dough is formed. Knead until just smooth. Grease a large jelly-roll pan. Separate dough into small baseball sized pieces. Cover you hands in flour to prevent sticking). Place on pan fairly close together. Put towel over rolls and put in a warm spot. Let rise for about 45 minutes or until double (do not over-rise, these are meant to be quick!) Bake at 350 degrees for 16-18 minutes (usually closer to 18), or until lightly browned. Spread butter on tops while still hot.
I usually cut this recipe in half. These can be eaten as a Sunday dinner roll, with soup, or as a bun with sloppy joes or BBQ beef.
