Oatmeal Cranberry Cookies


Makes 4 dozen or 48 cookies
2 cups flour
1/2 tsp salt
1/2 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
1 Tablespoon vanilla
3 Tablespoons milk
2 large eggs
2 sticks softened UNSALTED butter
1 cup light-brown sugar, packed
1/2 cup sugar, 3 cups old fashion oats, 1 cup dried Cranberries, Half of a 12oz bag of White Chocolate Chips
In a medium bowl, whisk together flour, salt, cinnamon baking powder, and baking soda. Set aside. In a small bowl mix together vanilla, milk, and eggs. Set aside. With a mixer combine butter with both sugars until light and fluffy. Put on low speed and add milk mixture, beat well. Add flour mixture . Remove from mixer and stir in oats, White chocolate chips, and cranberries. Place dough in refrigerator until firm, at least 2 hours. Preheat oven to 350. Line several baking sheets with parchment paper and set aside. Shape 2 Tablespoons of dough into a ball. 12 on a sheet. Then press with bottom of a glass until 2 inches in diameter rounds.Bake until golden but still soft in center 16-18 minutes. Rotating halfway through. Remove from oven, Transfer parchment and cookies to wire rack to cool.
